Ingredients

  • 2 lbs pork loin
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 teaspoons smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 cup chicken broth
  • 2 tablespoons balsamic vinegar
  • Fresh herbs for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, mix olive oil, garlic, smoked paprika, salt, black pepper, and thyme.
  • Rub the spice mixture all over the pork loin, ensuring it's evenly coated.
  • Heat a skillet over medium-high heat and sear the pork loin on all sides until golden brown.
  • Transfer the seared pork to a baking dish.
  • Pour chicken broth and balsamic vinegar around the pork.
  • Cover the dish with aluminum foil and bake in the preheated oven for 40 minutes.
  • Remove foil and bake for an additional 20 minutes to develop a crust.
  • Use a meat thermometer to check for doneness (145°F/63°C).
  • Let the pork rest for 10 minutes before slicing.
