Ingredients

  • 3-4 lbs pork loin roast
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 2 tbsp fresh rosemary chopped
  • 2 tbsp fresh thyme chopped
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 cup chicken broth
  • 2 tbsp Dijon mustard
  • 1 tbsp balsamic vinegar

Instructions

  • Preheat your oven to 375°F (190°C).
  • Pat the pork loin roast dry with paper towels.
  • Rub the olive oil all over the pork loin.
  • In a bowl, mix garlic, rosemary, thyme, salt, and pepper.
  • Spread the herb mixture evenly over the pork.

  • Mix chicken broth, Dijon mustard, and balsamic vinegar; pour over the pork.
  • Roast in the oven for 1 hour or until internal temperature reaches 145°F (63°C).
