Ingredients

  • 1 pound pork tenderloin
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 tablespoon balsamic vinegar
  • 1 cup mixed vegetables carrots, celery, bell peppers

Instructions

  • Preheat your oven to 400°F (200°C).
  • Pat the pork tenderloin dry with paper towels.
  • Season the pork with salt, pepper, rosemary, and thyme.
  • In a skillet, heat olive oil over medium-high heat.
  • Once hot, sear the pork tenderloin on all sides until browned.
  • Add minced garlic and sauté for 1 minute.
  • Pour in the chicken broth and balsamic vinegar.
  • Transfer the skillet to the preheated oven.
  • Roast for 20-25 minutes or until the internal temperature reaches 145°F (63°C).
  • Let the pork rest for 5 minutes before slicing and serving.
