Soak the dried hominy overnight in water.
Drain and rinse the hominy, then place it in a large pot.
Add 8 cups of water and bring to a boil over medium heat.
In a separate pan, brown the pork shoulder cubes.
Add the browned pork to the pot with hominy.
Stir in the chopped onion, minced garlic, and salt.
Season with oregano and cumin.
Reduce heat and simmer for 1.5 hours until the pork is tender.
If desired, add red chilies for extra flavor.
Serve hot with desired toppings.
