Ingredients

  • 2 cups dried hominy
  • 1 pound pork shoulder cubed
  • 8 cups water
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 teaspoons salt
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 1 can red chilies optional
  • Toppings: sliced radishes shredded cabbage, diced onions, fresh cilantro, lime wedges

Instructions

  • Soak the dried hominy overnight in water.
  • Drain and rinse the hominy, then place it in a large pot.
  • Add 8 cups of water and bring to a boil over medium heat.
  • In a separate pan, brown the pork shoulder cubes.
  • Add the browned pork to the pot with hominy.
  • Stir in the chopped onion, minced garlic, and salt.
  • Season with oregano and cumin.
  • Reduce heat and simmer for 1.5 hours until the pork is tender.
  • If desired, add red chilies for extra flavor.
  • Serve hot with desired toppings.
