Ingredients

  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar

Instructions

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13 inch baking pan.
  • In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, and vegetable oil.
  • Beat in the eggs one at a time, mixing well after each addition.
  • In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  • Pour the batter into the prepared baking pan, spreading it evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the bars to cool completely in the pan.
  • Prepare the cream cheese frosting by beating together the cream cheese, butter, and powdered sugar until smooth.
