Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter melted
  • 16 oz cream cheese softened
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • Whipped cream for topping

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  • Press the mixture into the bottom of a greased 9x13-inch baking pan.
  • In a large mixing bowl, beat the cream cheese until smooth.
  • Add in the pumpkin puree, sugar, eggs, and vanilla extract; mix until well combined.
  • Stir in cinnamon, nutmeg, and ginger until evenly distributed.
  • Pour the pumpkin mixture over the crust in the baking pan.
  • Bake for 50 minutes or until the center is set.
  • Allow to cool at room temperature, then refrigerate for at least 4 hours.
  • Cut into bars and serve with whipped cream on top.
