Preheat your oven to 350°F (175°C).
In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
Press the mixture into the bottom of a greased 9x13-inch baking pan.
In a large mixing bowl, beat the cream cheese until smooth.
Add in the pumpkin puree, sugar, eggs, and vanilla extract; mix until well combined.
Stir in cinnamon, nutmeg, and ginger until evenly distributed.
Pour the pumpkin mixture over the crust in the baking pan.
Bake for 50 minutes or until the center is set.
Allow to cool at room temperature, then refrigerate for at least 4 hours.
Cut into bars and serve with whipped cream on top.
