Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1 bell pepper diced
  • 1/2 red onion finely chopped
  • Fresh cilantro or parsley chopped
  • 1/2 avocado sliced
  • Dressing of your choice
  • Salt and pepper to taste

Instructions

  • Rinse quinoa under cold water to remove bitterness.
  • In a medium saucepan, combine quinoa and water/broth.
  • Bring to a boil over medium heat.
  • Reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed.
  • Remove from heat and let it sit for 5 minutes.
  • Fluff quinoa with a fork and let it cool slightly.
  • In a large bowl, combine cooked quinoa and chopped vegetables.
  • Drizzle your favorite dressing over the mixture.
  • Season with salt and pepper to taste, and garnish with fresh herbs.
  • Serve immediately or refrigerate for later.
