Chop the cucumber, bell pepper, and cherry tomatoes.
In a large bowl, combine the cooled rice and chopped vegetables.
Drizzle with olive oil and lemon juice.
Season with salt and pepper, then toss gently to combine.
Serve chilled or at room temperature.
