Ingredients

  • 3-4 lb beef roast ribeye, sirloin, or tenderloin
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 4 cloves garlic minced
  • Fresh herbs rosemary, thyme
  • 1 cup beef broth

Instructions

  • Preheat your oven to 450°F (232°C).
  • Remove the roast from the refrigerator and let it sit at room temperature for 30 minutes.
  • Pat the roast dry with paper towels to ensure a good sear.
  • Rub olive oil over the entire surface of the roast.
  • Season generously with salt, pepper, and minced garlic.
  • Heat a large skillet over medium-high heat and sear the roast on all sides until browned.
  • Place the seared roast in a roasting pan and add herbs.
  • Pour beef broth into the pan to keep the roast moist.
  • Roast in the preheated oven for about 15 minutes.
  • Lower the temperature to 325°F (163°C) and continue roasting until the desired internal temperature is reached.
