Ingredients

  • 1 bell pepper any color
  • 1 zucchini
  • 1 eggplant
  • 2 carrots
  • 1 red onion
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and cut the vegetables into evenly sized pieces.
  • Place the chopped vegetables in a large bowl.
  • Drizzle olive oil over the vegetables.
  • Sprinkle garlic powder, oregano, salt, and pepper.
