Ingredients

  • 1 whole chicken about 4-5 lbs
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Fresh herbs for garnishing optional

Instructions

  • Preheat your oven to 375°F (190°C).
  • Pat the chicken dry with paper towels.
  • In a bowl, mix olive oil, salt, pepper, garlic powder, onion powder, paprika, and thyme.
  • Rub the spice mixture all over the chicken, including under the skin.
  • Place the chicken breast side up in a roasting pan.
  • Insert a meat thermometer into the thickest part of the thigh.
  • Roast in the preheated oven for about 1 hour and 15 minutes.
  • Check that the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for 10-15 minutes before carving.
  • Garnish with fresh herbs if desired and serve.
