Preheat your oven to 375°F (190°C).
Pat the chicken dry with paper towels.
In a bowl, mix olive oil, salt, pepper, garlic powder, onion powder, paprika, and thyme.
Rub the spice mixture all over the chicken, including under the skin.
Place the chicken breast side up in a roasting pan.
Insert a meat thermometer into the thickest part of the thigh.
Roast in the preheated oven for about 1 hour and 15 minutes.
Check that the internal temperature reaches 165°F (75°C).
Let the chicken rest for 10-15 minutes before carving.
Garnish with fresh herbs if desired and serve.
