Ingredients

  • 200 g pasta penne or fettuccine
  • 250 g fresh salmon fillet
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 can 400g crushed tomatoes
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Grated Parmesan cheese for serving

Instructions

  • Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
  • Heat olive oil in a skillet over medium heat.
  • Add minced garlic and sauté for 1 minute until fragrant.
  • Cut the salmon into bite-sized pieces and add to the skillet.
  • Cook the salmon for about 4-5 minutes until just cooked through.
  • Add crushed tomatoes, oregano, salt, and pepper to the skillet and let simmer for 10 minutes.
  • Drain the pasta and toss it in the skillet with the salmon sauce.
  • Add reserved pasta water if needed to keep the sauce moist.
  • Garnish with fresh basil and serve with grated Parmesan cheese.
