Preheat the oven to 400°F (200°C).
Roll out the thawed puff pastry on a lightly floured surface.
Cut the pastry into rectangles, about 4 inches wide.
Season the sausage meat with salt, pepper, and herbs.
Place a portion of sausage meat along one edge of each rectangle.
Roll the pastry over the sausage meat, sealing the edges.
Place the rolls seam-side down on a baking sheet.
Brush the tops with the beaten egg for a golden finish.
Bake in the preheated oven for 25-30 minutes, or until golden brown.
Allow to cool slightly before serving.
