Ingredients

  • 4 chicken thighs bone-in, skin-on
  • 1 lb baby potatoes halved
  • 4 carrots peeled and cut into sticks
  • 1 red onion cut into wedges
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine the chicken thighs, baby potatoes, carrots, and red onion.
  • Add minced garlic, olive oil, paprika, thyme, salt, and pepper. Toss everything together until well-coated.
  • Spread the mixture evenly on a large sheet pan, arranging the chicken skin-side up.
  • Roast in the preheated oven for 35-40 minutes.
  • Check the chicken’s internal temperature; it should reach 165°F (74°C).
  • Let it rest for 5 minutes before serving.
