Ingredients

  • 4 large flour tortillas
  • 2 cups shredded cheese cheddar or Monterey Jack
  • 1 cup cooked chicken diced
  • 1 cup bell peppers diced
  • 1 cup black beans drained and rinsed
  • ½ cup corn
  • 1 teaspoon taco seasoning
  • Olive oil for brushing
  • Fresh cilantro for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.
  • Place one tortilla on the baking sheet.
  • Sprinkle half of the cheese evenly over the tortilla.
  • Layer the cooked chicken, bell peppers, black beans, and corn on top of the cheese.
  • Season with taco seasoning for added flavor.
  • Add the remaining cheese on top of the fillings.
  • Cover with another tortilla.
  • Brush the top tortilla with olive oil for a crispy texture.
  • Bake for 15-20 minutes, until golden brown and crispy.
