Ingredients

  • 4 large sweet potatoes peeled and cubed
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup butter melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 2 cups mini marshmallows

Instructions

  • Preheat your oven to 350°F (175°C).
  • Boil sweet potatoes in a large pot until tender (about 15-20 minutes).
  • Drain and mash the sweet potatoes in a large mixing bowl.
  • Add brown sugar, milk, melted butter, vanilla extract, and cinnamon to the mashed potatoes.
  • Mix until smooth and well combined.
  • Pour the sweet potato mixture into a greased 9x13 inch baking dish.
  • Evenly distribute the mini marshmallows over the top of the casserole.
  • Bake in the preheated oven for 30 minutes, or until marshmallows are golden.
