Ingredients

  • 1 cup cooked rice
  • 1 cup cooked black beans
  • 1 cup diced tomatoes
  • 1 avocado sliced
  • 1 cup shredded lettuce
  • 1/2 cup chopped onions
  • 1/2 cup shredded cheese
  • 1/4 cup salsa
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning
  • Corn tortillas for serving

Instructions

  • Cook the rice according to package instructions.
  • Heat olive oil in a pan over medium heat.
  • Add chopped onions and sauté until translucent.
  • Stir in the black beans and taco seasoning, cooking until heated through.
  • Prepare toppings: dice tomatoes, slice avocado, and chop lettuce.
  • In a bowl, layer the rice as the base.
  • Add sautéed black beans and onions on top of the rice.
  • Arrange diced tomatoes, sliced avocado, and shredded lettuce over the beans.
  • Sprinkle cheese and add a dollop of salsa.
  • Serve with corn tortillas.
