Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups tortilla chips
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • ½ cup sour cream
  • Fresh cilantro for garnish

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a skillet, brown the ground beef or turkey over medium heat.
  • Drain excess fat and add black beans, diced tomatoes, and taco seasoning.
  • Stir until well combined and heated through.
  • In a baking dish, layer half of the tortilla chips.
  • Spoon half of the meat mixture over the chips.
  • Sprinkle with half of the cheddar cheese.
  • Repeat the layers with the remaining chips, meat, and cheese.
  • Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly.
  • Remove from the oven and let cool slightly before serving.
