Ingredients

  • 1 can black-eyed peas drained and rinsed
  • 1 can black beans drained and rinsed
  • 1 cup corn fresh or canned
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1/2 red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  • In a large mixing bowl, combine the black-eyed peas, black beans, and corn.
  • Add the diced red and green bell peppers and red onion.
  • Chop the fresh cilantro and add it to the mixture.
  • In a separate bowl, whisk together the olive oil, red wine vinegar, lime juice, cumin, salt, and pepper.
  • Pour the dressing over the bean and vegetable mixture.
