Ingredients

  • 2 cups turkey drippings
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups turkey or chicken broth
  • Salt and pepper to taste
  • Optional: fresh herbs thyme, rosemary

Instructions

  • Collect the drippings from the roasted turkey and skim off excess fat.
  • In a medium saucepan, melt the butter over medium heat.
  • Add the flour to the melted butter, whisking constantly for about 2 minutes.
  • Gradually stir in the turkey drippings.
  • Slowly add the broth, whisking to combine and prevent lumps.
  • Bring the mixture to a boil, then reduce heat to simmer.
  • Season with salt and pepper to taste.
  • If desired, stir in fresh herbs.
  • Simmer for 5-10 minutes until thickened, stirring occasionally.
  • Serve hot over turkey or mashed potatoes.
