Ingredients

  • 1 cup mixed greens
  • 1/2 cup cherry tomatoes halved
  • 1/2 cucumber sliced
  • 1/2 bell pepper diced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup radishes julienned
  • 1/2 avocado diced
  • 1/4 cup corn
  • 1/4 cup chickpeas drained and rinsed
  • Fresh herbs cilantro, parsley, or basil
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • Wash all the vegetables thoroughly.
  • Chop the mixed greens and place them in a large salad bowl.
  • Halve the cherry tomatoes and add them to the bowl.
  • Slice the cucumber and bell pepper, then add them to the mix.
  • Thinly slice the red onion and julienne the radishes before adding.
  • Dice the avocado and gently fold it into the salad.
  • Add the corn and chickpeas for extra protein and sweetness.
  • Finely chop the fresh herbs and sprinkle them on top.
  • In a small bowl, whisk together the lemon juice and olive oil.
  • Drizzle the dressing over the salad, season with salt and pepper, and toss gently to combine.
