Ingredients

  • 1 cup lettuce chopped
  • 1 medium cucumber sliced
  • 1 medium carrot julienned
  • 1 bell pepper any color, diced
  • 1 cup cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • 1 avocado diced
  • 1/4 cup olives sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  • Wash all vegetables thoroughly under cold water.
  • Chop the lettuce into bite-sized pieces and place in a large salad bowl.
  • Slice the cucumber into thin rounds and add to the bowl.
  • Julienne the carrot and add to the salad mixture.
  • Dice the bell pepper and toss it into the salad bowl.
  • Halve the cherry tomatoes and mix them in.
  • Thinly slice the red onion and add for a zesty flavor.
  • Dice the avocado and carefully fold it into the salad.
  • Slice the olives and sprinkle them over the top.
  • Drizzle olive oil and lemon juice, then season with salt and pepper. Toss well to combine.
