Ingredients

  • 4 cups watermelon diced
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh mint leaves chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  • Select a ripe watermelon and cut it in half.
  • Scoop out the flesh and dice it into bite-sized cubes.
  • In a large mixing bowl, combine the diced watermelon and crumbled feta cheese.
  • Add the chopped mint leaves.
  • In a small bowl, whisk together olive oil and balsamic vinegar.
  • Drizzle the dressing over the watermelon mixture.
