In a skillet, cook the ground turkey or beef over medium heat until browned.
Add chopped onions and cook until translucent.
Stir in diced tomatoes and seasonings; simmer for 5 minutes.
Fill each zucchini boat with the meat mixture.
Top with shredded cheese.
Place the boats on a baking sheet.
Bake for 25 minutes or until the zucchini is tender.
Garnish with fresh parsley before serving.
