Ingredients

  • 4 medium zucchinis
  • 1 cup of ground turkey or beef
  • 1 cup of diced tomatoes
  • 1/2 cup of onion chopped
  • 1 cup of shredded cheese mozzarella or cheddar
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Preheat the oven to 375°F (190°C).
  • Cut the zucchinis in half lengthwise and scoop out the center to create boats.
  • In a skillet, cook the ground turkey or beef over medium heat until browned.
  • Add chopped onions and cook until translucent.
  • Stir in diced tomatoes and seasonings; simmer for 5 minutes.
  • Fill each zucchini boat with the meat mixture.
  • Top with shredded cheese.
  • Place the boats on a baking sheet.
  • Bake for 25 minutes or until the zucchini is tender.
  • Garnish with fresh parsley before serving.
