Ingredients

  • 2 cups grated zucchini
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup chopped nuts or chocolate chips optional

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • Grate the zucchini and place it in a clean kitchen towel to remove excess moisture.
  • In a bowl, mix the flour, baking soda, baking powder, salt, and cinnamon.
  • In another bowl, whisk together the sugars, eggs, oil, and vanilla extract.
  • Add the grated zucchini to the wet mixture and stir until combined.
  • Gradually fold in the dry ingredients until just combined; do not overmix.
  • If desired, fold in nuts or chocolate chips.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
