Ingredients

  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1 clove garlic minced
  • Salt and pepper to taste
  • 1 cup cherry tomatoes halved
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  • Wash the zucchinis thoroughly and cut off the ends.
  • Use a spiralizer or vegetable peeler to create noodles from the zucchinis.
  • In a skillet, heat olive oil over medium heat.
  • Add minced garlic and sauté for about 30 seconds until fragrant.
  • Toss in the zucchini noodles and sauté for 2-3 minutes until slightly tender.
  • Season with salt and pepper to taste.
  • Add halved cherry tomatoes and cook for another minute.
  • Remove from heat and sprinkle with Parmesan cheese and fresh basil before serving.
