Prepare the crockpot by greasing it lightly with olive oil.
Place the chicken breasts at the bottom of the crockpot.
In a bowl, mix the cream of chicken soup, ranch dressing mix, and chicken broth.
Pour the mixture over the chicken breasts.
Add chopped onions on top of the chicken.
Season with salt and pepper to taste.
Cover the crockpot and set it on low for 6-8 hours or high for 3-4 hours.
Once cooked, shred the chicken directly in the gravy using two forks.
Stir the mixture until well combined.
Serve warm, garnished with fresh parsley.
