Layer half of the cheese mixture over the tomatoes.
Add another layer of tomato slices, followed by the remaining cheese mixture.
Drizzle with olive oil and balsamic vinegar.
Bake in the preheated oven for 20 minutes or until bubbly and golden.
Allow to cool slightly before slicing and serving.
